Open Question: Is there such a thing as a reputable online school?

My specific areas of interest are centered around information technology. My wife, and a couple of my friends go to a certain well known and widely advertised online school, and I frequently hear of the idiot antics of their classmates, and even teachers. "In the state of Canada, the geologic event was Ice", etc... I find it hard to believe that anyone in that institution cares about the quality of the education they are providing. Also, I have a significant amount of experience in IT already, and many of the degree programs that I've looked into consist largely of material that I either already know, or is of largely no interest or value to my career plans. Of course a degree will be broad, and cover things I don't care about, but I would like at least 60% of the material to be new to me. I know that if the only thing I get out of a program is a credential, as opposed to a genuine learning experience, I will never stay motivated enough to finish it. Masters level stuff would certainly be a learning experience, but I don't think I'm ready to give up my life as a technician yet, and it all seems to be 10,000ft perspective stuff. "How can IT help actualize resource allocation models to support my business strategy... blah blah blah...". Certainly it's important to someone, and maybe even me, one day... but not anytime soon. Am I being completely unrealistic here? Should I just grab up a "whatever" degree to check the block and keep learning everything I can through certification programs and self-study? Or is there a school out there where I can pick up a credential that WON'T be openly mocked in a job interview, one that will actually help me to learn things I need to know, or maybe even do both?...
